This is one of those impressive tasting dinners which looks like you have spent hours slaving over a hot stove, when really you have been sipping wine and playing on your Facebook!
I’ve made this recipe a few times and it’s an easy mid week dinner if you chuck your meat, potatoes and veggies all in the same dish and oven cook together. I just spritz the vegetables and potatoes with a tiny bit of olive oil to help them roast alongside the meat.
You can use pork steaks or pork chops, it’s up to you. I would also recommend that you give the potatoes a head start in the oven first to make sure they are nice and crispy or just partially cook in the microwave before adding to the oven dish. This will ensure that everything is ready and cooked at the same time. Sometimes I sprinkle the potatoes with a few herbs or smoked paprika for extra flavour.
I’ve also cooked a similar version on the BBQ in the Summer. Just watch the maple syrup doesn’t catch as sugary glazes can brown the outside of the meat quickly. The last time I made this on a BBQ I served alongside some BBQ chicken, homemade coleslaw, BBQ roasted tomatoes and potatoes. It was delicious.
Here’s my easy recipe for you to enjoy and it really is simple!
First make a simple marinade from a tablespoon each of maple syrup, balsamic vinegar and dark soy sauce plus a few crushed garlic cloves. I usually marinate the pork steak or chops for around 30 min, covered in the fridge.
Place in an oven proof dish, top the pork with some drained canned pineapple and place any other veggies you wish to cook alongside the meat. Sweetcorn roasts well in the oven too and is a great vegetable to cook with the pork, plus there’s less washing up with this one pot meal.
Bake the meat in the oven at 160C for 30 -35 min and serve with your roasted vegetables or salad and enjoy. Delicious!
