Peach, Tomato and Coriander Salad

This is a fabulous salad to serve with grilled meat, fish, burgers or at a BBQ with friends. I make slightly different versions of this recipe, sometimes adding onion, occasionally adding chopped peppers and for some heat you can add half a chopped red chilli. It tastes amazing and it’s worth keeping a can of peaches in your store cupboard to throw this easy salad together in minutes.

Just mix  all of the following together in a big bowl adding the quantities of fruit and vegetables you like to suit your personal taste.

Ingredients
Chopped fresh or canned (in juice, then drained) peaches
Fresh coriander
Chopped fresh, ripe vine tomatoes
A tablespoon each of fresh lemon juice and extra virgin olive oil
A tablespoon of the peach juice
Optional extras: chopped onion, a little fresh chopped chilli or a chopped pepper or two.

It’s an interesting salad to serve friends as the fresh flavour combined with the sweetness of the peaches goes really well with most Al Fresco cooking….and definitively with a glass of wine! Enjoy!
