Did I mention that I love soup? Soup is so warming and nurturing plus it’s the ultimate healthy fast food when packed with plenty of fresh vegetables. This recipe was actually a bit of an experiment to use up some pears but it tasted so amazing I made it again a few days later. You can make and keep in the fridge for a few days for healthy lunches or freeze in batches then reheat thoroughly.
It has a delicate slightly sweet flavour from the pears and is a great tasting Autumn soup or perfect for serving at your Bonfire Night party. It would probably also work with apples instead of pears so I must give that a try next. This fabulous soup is easy to make and is Weight Watcher friendly. Enjoy topped with grated cheese, fresh herbs, walnuts or croutons.
2 heads of broccoli chopped
3 pears, cored and chopped (no need to peel)
2 small onions, peeled and chopped
2 garlic cloves, finely chopped
1 teaspoon each of garlic granules and onion granules
3 chicken or vegetable stock cubes
( for a thicker texture also add one chopped peeled potato)
enough hot water from the kettle to just cover everything
Salt and freshly ground black pepper to taste
Put everything into an Instant Pot Pressure Cooker or a stock pot with a lid for hob cooking.
Cook on Manual for 4 min in the Instant Pot or 25 min simmering on the hob in a stock pot with a lid (stirring occasionally).
Blitz with a hand held blender once cooked, season to your own personal taste and serve in warmed bowls. Delicious!
